Please help me out..

I wanna create a vinyl-style-sticker that i can stick on say...bikes...

I'm creating these stickers on Photoshop...

How much dimension (canvas) should i be working on so that the stickers are crisp and not jagged at the curves?!

It depends on a couple of things. Firstly if you know what size they will be when they're printed you can pretty much just work at the same scale in Photoshop. i.e; if your sticker will be printed at 100mm x 100mm then you can just make a new photoshop image as 100mm x 100mm.

Typically working with stickers make sure your dpi is around 300, which should give you a clean look. You can check this when you start a new image by looking at the resolution checkbox just under the dimensions box and typing in 300.

It's pretty much always best to work with a larger file, since it's far easier to scale down than up when printing.
